¿Alguna vez has sentido en un lugar de la naturaleza que siempre habías pertenecido allí? Eso nos ocurrió la primera vez que llegamos a La Silvestre, un pequeño olivar tradicional en el Valle del Tiétar, en el centro de España.
Casi una década antes, con la sensación persistente de que nos faltaba algo fundamental, dejamos nuestros trabajos de oficina en Londres, vendimos la casa y nos fuimos a trabajar como voluntarios en granjas ecológicas por todo el mundo, buscando aprender otras formas de vivir más cerca de la tierra. En 2025, ese viaje encontró su destino.

Producimos y vendemos el mejor aceite de oliva, cultivado en olivares tradicionales renaturalizados, restaurando en el proceso nuestra relación con la naturaleza y los alimentos que nos proporciona. Comenzamos con nuestro propio olivar y con productores que ya están haciendo este trabajo y, con el tiempo, queremos ver todo el valle renaturalizado, porque el mejor aceite de oliva no sale de una explotación agrícola: sale de un ecosistema rico.
La vida moderna nos ha separado de la naturaleza y ha convertido nuestra relación con la comida en algo transaccional, distante y dañino para nuestros cuerpos y para el planeta.
Llevamos demasiado tiempo viviendo fuera del mundo natural, olvidando que nuestros cuerpos hablan el mismo idioma que la tierra viva: que no estamos separados del ecosistema, sino que somos parte de él.
UL es el cierre de esa brecha. Nuestro aceite renaturalizado es una invitación a volver al ecosistema al que pertenecemos. Al volver a tu hogar, con su sabor verdadero, sin artificios, estás volviendo también a lo natural que hay en ti.

CUSTODIA
Esta tierra no nos pertenece; solamente la custodiamos.
Rechazamos las hileras estériles de la agricultura extractiva extensiva y elegimos nutrir un paisaje vivo: uno donde la flora autóctona alimenta el suelo y la fauna silvestre lo mantiene en equilibrio, obligando a nuestros árboles a adaptarse, a defenderse y a crecer más ricos por ello. Nuestro papel es simplemente proteger ese equilibrio, para que la tierra continúe prosperando mucho después de nosotros.
COMUNIDAD
Crecer juntos, prosperar juntos.
Tanto en nuestra producción como al comisionar a otros productores, unimos a agricultores, distribuidores, clientes y colaboradores que comparten nuestro respeto por la tierra. Para nosotros, conservación, sostenibilidad y regeneración no son etiquetas que lucir, sino compromisos enraizados en un sentido real de pertenencia. Nuestra presencia colectiva deja cada olivar más vivo de lo que lo encontramos.
UNA SALUD (ONE HEALTH)
La salud humana no existe de forma aislada a la salud de la tierra.
No fabricamos bienestar: lo cosechamos de un paisaje que se está curando a sí mismo. En cada paso asumimos la responsabilidad de nuestro impacto, eligiendo la regeneración antes que la explotación. Cuando la naturaleza sana, sanamos nosotros.

Igual que te pedimos que confíes en nosotros para algo tan personal como lo que alimenta tu cuerpo, creemos que mereces saber exactamente lo que estás tomando, de dónde viene y cómo se hizo: sin etiquetas vagas, sin aditivos innecesarios, sin tierras valladas y sin atajos. De hecho, nos encantaría que vinieras a verlo. Nuestros olivares están, literalmente, siempre abiertos.

Compramos esta tierra en junio de 2025 con la idea de montar un centro de retiros, pero la tierra tenía otros planes. De pie entre árboles más viejos que nosotros dos, nos dimos cuenta de que estaba hablando: solo teníamos que callarnos y escuchar. Así fue como recuperar se convirtió en nuestra prioridad, manteniendo a la vez nuestra misión original de crear espacios donde las personas y la naturaleza puedan crecer.
Con la ayuda de nuestra bióloga Adriana (bióloga especializada en recuperación de ecosistemas), empezamos a actuar — observaciones de aves, colocación de hoteles de insectos y cajas nido, podas, manejo de la cubierta… Aplicamos el modelo de Olivares Vivos árbol por árbol — y es una historia que merece su propia página. We bought this land in June 2025 with an idea for a retreat centre, but the land had other plans. Standing among trees older than either of us, we realised it was speaking — we just had to stop talking over it and listen. That’s how we ended up recovering our olive grove instead, to produce the wildest extra virgin olive oil on the planet.
La Silvestre sits above La Parra, in Ávila, at 700 metres. Almost 3 hectares, 2.2 of them olive grove: 250 trees, most over a hundred years old, three native varieties. The rest is wild green pocket and bare granite, watched over by a centenarian stone pine we call El Guardián. The land has never been fenced — it borders the forest and neighbouring groves, and animals move through it freely.
To guide us on this path, we work alongside Adriana, our Ecosystem Recovery Expert, who helps us understand the land, restore its natural balance, and let its untamed spirit thrive.
Land like this doesn’t need to be controlled. It needs to be left alone, in the right ways, and helped in others.
The trees had been abandoned for decades before we arrived, so our first job is to rejuvenate the trees: pruning them back, slowly, so they can recover their strength without being shocked into it. Full production is still a few years off. But the land underneath them is already telling us something. Since the previous owners hadn’t used herbicides or pesticides, it means that the soil, the undergrowth, and the small creatures living in the stone walls around the grove have a head start we don’t have to create ourselves. We just have to maintain it and improve it.
So we brought in Adriana, a biologist who specialises in ecosystem restoration, to study the land and design a recovery plan and improvement plan. We also completed the official course run by Olivares Vivos, and we’re now applying their model for managing an olive grove in a way that increases its biodiversity rather than working against it. We’ve applied for European organic certification through CAAE, but for us that’s the starting point, not the goal. Organic only tells you that the produce hasn’t been sprayed. It doesn’t tell you whether an ecosystem is actually healthy.
Oil from a grove like this isn’t the same as oil from land that’s been cleared, tilled, and sprayed. Trees that have to compete a little, growing among wild plants instead of bare soil, defend themselves — and that defence shows up in the fruit, richer in polyphenols and more nutrient dense, and of course a wild flavour. We think of our own health the same way: neither one does well in isolation from a living, complex environment.
This is still early. Our own harvest is a couple of years off, so for now we’re bringing you oil from producers who share this same commitment. But La Silvestre is where the story begins, and where we’ll keep coming back to, season after season.
