The wilder the land, the better the oil
What rewilding an olive grove looks like
Rewilding in traditional rainfed olive groves consists of restoring ecological processes and native biodiversity within and around the grove, allowing nature to self-regulate without the olive tree losing its productive function.
Instead of treating the field as a sterile monoculture sustained by chemical pesticides, synthetic fertilisers and intensive tillage, rewilding integrates wild vegetation, local fauna, and soil microbiota as structural allies of agricultural management.
It is slower and more difficult. But it also produces better oil: a tree living under the stress of a varied and harmonious ecosystem yields fruit with more complex aromas and flavors, as well as a higher density of nutrients and polyphenols.
